The grapes were harvested and carefully selected by hand. Then they underwent a cold maceration at 5ºC for two days. The fermentation took place with selected yeasts in stainless steel tanks at 26ºC. For the malolactic fermentation, part of the wine was racked into French oak foudres as well as into concrete eggs. The wine was then left to mature for 18 months.
